Coffee Marble Cake

I got this cake from some website … but to be honest i dont really remember which one.. i have this habit of just saving the recipes i like on a word document … so i usually loose the source … Anyway i apologize for not being able to give the original source …

This cake is actually one of my favorites .. its very moist and perfect for breakfast … its very easy to make .. all you need is a hand mixer … to make it you need:

– 2 cups flour

– 1/2 ts salt

– 1/4 ts baking powder

– 1/4 ts baking soda

– 1/2 cup butter.. which is around 4 ounces

– 1 cup sugar

– 1 ts vanilla

– 3 eggs

– 1 cup yogurt

– 1/4 cup instant coffee

Dry ingredients

Preheat oven to 180Ā°C…. Prepare a 9x5x3 inch loaf pan by either greasing it or using parchement paper …

In a bowl mix together the flour, salt, baking powder, and baking soda … set it aside

butter and sugar

In another bowl … Using a hand mixer … mix together the butter and sugar..

add vanilla

Add the vanilla and keep mixing until fluffy ..

add eggs

Start adding the eggs one at a time …

Add all eggs

After the third egg … this is how the batter will look …

add flour

Now start alternating the flour mixture and the yogurt … start and finish with the flour mixture …

So first around 2 tb flour …

add yogurt

Then around 1 tb yogurt …

cake batter

Mix them all well into a smooth batter …

add instant coffee

Remove around 1 cup of the cake batter and place it in a seperate bowl … and add the instant coffee to it .. mix it all well …

first layer

In the prepared loaf pan … add half of the cake batter …

coffee layer

Then add the coffee cake batter …

top layer

Then the rest of the cake batter … and smooth the top …

Bake for 1 hour and 15 mins … until tester inserted comes out clean .. Cool it completly

Coffee marble cake

And serve …. delicious moist cake …

Enjoy šŸ™‚ …

can i use chocolate instead of coffee???? also sour cream instead of yogurt??

  25. limeandlemon says:

Cath: if you want to substitute chocolate for coffee i would suggest using the one for hot chocolate … because in this recipe the instant coffee melts right in the batter and it doesnt make it more firm ….And about the sour cream for yogurt .. i never really tried it with sour cream .. but i wouldnt recommend it ..as the yogurt is more acidic than the sour cream (meaning its a little more sour).. and that might effect the cake …
hope this helps … stay in touch šŸ™‚

  26. limeandlemon says:

Anita: Well im gald that this recipe helps šŸ˜› … I use normal yogurt .. nothing flavored … i hope u give it a try .. let me know if u do … stay in touch šŸ™‚

Hi limeandlemon. I’d like to try your coffee cake – and was wondering what kind of flour you use. Is it plain flour (think that’s called all purpose in the USA) or is it what we call self raising in the UK where the raising agents are in the flour already?
    Thank you!

  68. limeandlemon says:

Hay Scotty … The flour i used is normal plain flour (all purpose one) … not the self rising one … just plain flour …. let me know how it turns out … and stay in touch šŸ™‚ … Laila
