Cinnamon Celebration Cake

This cake came about when i was trying to make a cake for my dads birthday … i knew he loves cinnamon cakes so i figured out a way to make one thats good enough for celebrations … here is wat i came out with …. to make it u will need:

Spong cake recipe (but add 2 ts cinnamon to the flour mixture to make it a cinnamon sponge cake)

– 3 cups vanilla flavored whipped cream(or whatever is enough to coat the entire cake)

– cinnamon syrup (described below how to make)

 When you are making the sponge cake … add 2 ts cinnamon to the flour mixture to make it into cinnamon sponge cake … i baked mine in two 9-inch pans so i wont have to cut it into two layers later …

Start by placing 4 peices of parchment paper on a cake serving dish then place the first cake layer on top of it … this step will prevent the cake dish from getting dirty while u frost the cake and will give u a neat finish …

add syrup

Now to make the cinnamon syrup .. in a pot …simply place a cinnamon stick with one cup water .. and let it boil until its dark in color (if alot of water evaporates .. add more water)… then add 1 tb sugar to it … and let it cool down…

In a sqeeze bottle or tablespoon … add  the cinnamon syrup to the cake … this makes the cake moist … dont add alot … or the cake will become too wet and break when serving …

add cream

 Frost the first layer of cake with whipped cream…

place the second layer

 Then place the second layer … and again add cinnamon syrup to it …

frist the entire cake

 Then frost the entire cake … you dont have to be too neat about it as its all goin to be covered …

layer with coconut cinnamon chips

Now add the coconut cinnamon chips to the sides then the top of the cake …


Remove the parchment paper …. and serve …

    Looks fantastic! I love cinnamon and coconut but would never have thought of combining those two flavors. Love the cinnamon syrup idea as well; I’ll have to try that with a vanilla bean or cardamom seeds as well. Will be checking back to your blog!
