Stuffed Mini-Loaf (Gift)

In a previous post … i mentioned that i will be posting alot of edible gifts that can be given on any possible occasion … so maybe a week back … i went to meet a friend of mine who just came back from london and settled back here .. so i decided to make her something and take it along.. i made 3 different types of mini loafs … one with marinated roasted red peppers… one with white cheese and green olives and lastly one with cinnamon and sugar … they all were kept in a basket .. but as they were right out of the oven i wasnt able to cover it…  but it turned out to be a great idea … To make it … you will need :

My basic dough recipe (u will need to double the recipe for this amount)

Marinated roaseted red peppers and mazzarella

– 1/2 cup White cheese (u can use whatever type it could be.. feta.. goat cheese .. haloumi.. anything u like)

– 1/4 cup Pitted sliced green olives

– 1/2 cup Light brown sugar

– 1 tb cinnamon

– Milk (enough for brushing the dough top)

– A basket

Prepare fillings

Start by preparing all the filling ……

Prepare the roasted peppers….. set aside ..

 And then grate the cheese .. prepare olives … and set aside …

Then mix the sugar and cinnamon and set aside too

Now divide the dough into six equal peices …. then on a lightly floured surface … roll out the first peice of dough .. i cant say what size to roll it into because it depends on your mini loaf pan size.. but it should atleast be two inches wider and triple the length of the loaf pan …

After rolling … start by spreading the roasted peppers marinate … make sure u leave the edges empty so u can seal it well ..

Then roll the dough and seal it at the ends and then tuck in the sides … so its totally sealed and the stuffing cant get out ..

Loaf pan

Place it in a mini loaf pan … and continue stuffing another dough with the raosted peppers ..  to have two stuffed with roasted peppers

white cheese and olive

Then repeat the same with the white cheese and olive .. again make two …

Cinnamon sugar

And the same with the cinnamon sugar … also make two …

Place all in the loaf pan and brush with milk and sprinkle each type with different thing to differentiate it … i used paprika for roasted peppers laof … sesame for the cheese and olive loaf … and for the cinnamon and sugar loaf.. i used the same thing that i it stuffed with …

puttin in basket

Bake for nearly 30 mins … until they r perfectly browned from the bottom and golden from the top … then place it in a basket and give it to someone who would appriciate it 😉 ….

  7. I saw this recipe 2 weeks ago and tried it last Sunday while the family was complete. It was a breakthrough in our household. They all loved it!
