Chicken stock and boiled chicken

This is the way that my mom makes chicken stock and boiled chicken … the good thing bout it is that you dont have to skim off any foam .. cuz in this way .. you accually dont get any foam .. and you get a perfectly boiled chicken and stock … all u need is :

– 1 chicken (quartered)

– 1 onion (i use red)

– salt pepper and spices (which ever way u like to season)

Now in a pot .. place the onion and the chicken pieces and the spices.. and cook on low for 15 mins .. what happenes is that the chicken releases its liquids then when it reduces.. you add enough water to cover the chicken .. then increase the heat to high and boil for 45mins .. until the chicken is done .. and thats it … simple and easy
